Founder Norio Takasugi introduced these thin, folded pancakes to the neighborhood, prioritizing precision in the batter recipe and the timing of the griddle. The kitchen still operates with that focus, turning out paper-thin layers stuffed with fresh fruit and house-made whipped cream.
