Inside, a vintage nineteen fifty-eight Probat roaster occupies the center of the room. Owners Sarah and Mathieu acquired the machine from a roastery in Montreal and spent months restoring its cast iron components to working order. Every batch of beans is processed here on this equipment, filling the street with the scent of coffee from early morning until the sun goes down.
