Shimon the Soup King is the blue-tiled storefront on the corner of Rabbi Akiva Street. Shimon Avishai opened this place in nineteen sixty-five, serving only two kinds of soup to workers in the surrounding market. He cooked in massive pots behind the counter, keeping the recipes for his Yemenite bean soup and chicken broth locked away. People still crowd the plastic tables for those same bowls, often waiting for a seat while the smell of cilantro and hawaij spice fills the air.
