This shop on Yishkon Street began in nineteen thirty-seven as a tiny food stall run by Shlomo and his son, Doron. They started by selling simple, warm chickpeas to workers in the surrounding Carmel Market. Today, fourth-generation family members still stand behind the counter, grinding dried beans into the smooth, pale paste that draws lines of people down the narrow sidewalk every morning.
