The Unschlittplatz centers on a heavy, half-timbered house from fourteen ninety-one, easily identified by the wide, overhanging gables that cast deep shadows over the square. This was the city’s tallow trade headquarters, where butchers brought animal fat to be processed into candles and soap. In sixteen ninety-five, a local councilor named Paul Behaim famously complained about the stench of boiling fat drifting into his nearby home, forcing the city to tighten regulations on the trade to keep the neighbors quiet.
