The heavy wooden door at the entrance to Gebrüder Fraunholz is often propped open, releasing the scent of cinnamon, cloves, and honey into the narrow cobblestone lane of the Altstadt. This bakery produces the city’s most famous export, the Elisenlebkuchen, in a shop that has occupied this site for centuries. Unlike mass-produced versions, the bakers here still grate their own nuts by hand and use a recipe that omits flour entirely. The result is a dense, fragrant cake held together by nothing but oil-rich almonds and hazelnuts.
